When you dream of a picturesque hilltop surrounded by rolling vineyards, that is Lupaia. Across the valley is Montepulciano, home to the famous Vino Nobile, and close by are the legendary vineyards of Brunello di Montalcino. All around are some lesser-known gems which can be sampled from our cellar along with Super Tuscans.
We enjoy visiting wineries as much as our guests, particularly searching out smaller, family-owned vineyards. If we had a wonderful time at the vineyard, you’ll find it on our wine list.
Each of Silvio’s Negroni recipes is unique. There’s the ‘GM’, named for our General Manager, whose favourite Negroni is mixed with Chianti Vermouth and Tuscan botanical Sabatini Gin.
Our tangy and refreshing Orange Negroni is infused with Sicilian orange peel.
Finally, the Vintage Negroni is aged for a month in a Vin Santo cask, which we borrowed from Chef Andrea’s father-in-law who used it to make the local sweet wine, the result is a sweet and smooth Negroni.
Each day our sommeliers select wines from the cellars to pair with Chef Andrea’s four course menu.
